We are proud to announce that we have now developed an excellent relationship with beef producers and processors from Prince Edward Island.
All of their cattle are raised on small family run farms where they are primarily grass fed with no added hormones, and where antibiotic use is restricted. The animals are "finished" on a combination of barley and potatoes.
Stuart Carroll himself has travelled to PEI to meet the farmers and see first hand the cattle he is buying and their surroundings. The fact that these animals are free to graze in the salty ocean breeze of the Maritimes and where they are always given access to fresh air and uncrowded conditions results in amazing flavor. All of our beef is then aged for a minimum of 28 days to ensure perfection.
The same passion for quality and flavor can be found in our locally raised, fresh Ontario pork, our fresh lamb and veal, and our air chilled, free run chicken. In fact, our chickens are from a small family run operation in Sharon Ontario, about two miles from Stuart Carroll's home.
